Tuesday Treats & Titles: Brazilian Assassin Cheese Bread

I have friends who like/want/need gluten-free good stuff so when I caught this on my local newscast and thought, mmm-mmm good! I’ll admit I haven’t made them yet nor have I tried to find tapioca flour. I should probably add it to my grocery list so I’ll remember, huh? Also, it’s still too hot to spent much time with the oven on in the kitchen. Anyway, here’s the recipe.

Ingredients:
1 1/2 cups tapioca flour
1/2 cup grated white cheddar, Parmesan or Romano cheese
2/3 cup milk
1/3 cup olive oil
1 egg

Instructions:

  1. Preheat oven to 400 degrees.
  2. Spray a mini muffin pan with nonstick cooking spray.
  3. Add all of the ingredients to a blender and blend until smooth.
  4. Pour the batter into the mini muffin pans till they are almost to the top.
  5. Bake for 25 minutes or until golden brown.
  6. Cool for 5 minutes and then serve.

And since I have not one but TWO books set in Brazil, I figured we’d go for a twofer! I suspect the couples from ASSASSIN’S MOON and UNDER THE ASSASIN’S MOON had this local staple often during their stays down there. If you haven’t, you’ll want to read both books.   1. I don’t really think about gluten, to be honest. Not usually anyway. I recently spent some time with a family member who has a ton of dietary restrictions – including gluten-free (and dairy-free, which leaves this recipe out, too, darn it) – and lemme tell ya, it ain’t easy. The stuff she can eat, that doesn’t taste like cardboard, is hard to find and/or super expensive.

    Anyway, you know me… I LOVE these books. So much awesome. Yay!

      There are plant-based chesses and “milk” products that could be substituted. I even googled egg substitutes and there are plant-based products there too–which she may already be aware of. The news folks were a bit skeptical until they tried a bite then they were gobbling them down. These things are are supposed to be really light and fluffy so you might pass it along with the suggestion of the ubstitutions. It’s a thought, anyway. I can only imagine how frustrating it is to find GOOD tasting stuff to eat with those tight restrictions. Because of our mutual friend, I always kind of keep an eye out. And yeah, you’re my biggest cheerleader and I’m pretty sure I couldn’t keep doing this without you on the sidelines! Much appreciated, m’friend. MUCH appreciated! 🤗

    Question- how does KU work on your end? What do you get from Amazon/Kindle out of it? I’ve always been curious how it works.

      If a book is enrolled in Kindle Unlimited, the author gets $.004 for each page read. Yes, that 4/100 of a cent. While a book is enrolled in KU, it can not be available for sale any playce else. It has to be exclusive to Amazon. After sitting down and doing the math, I decided it made more sense to go wide with distribution. I* no longer have any books in KU though readers who downloaded my books on KU prior to removal can still read them and I get the royalty. To translate this into $$, when I sell a book for $2.99, I make around $2.06 in royalty. If that same book was in KU, people would have to read 515 pages for me to make the same amount. Since my books average about 200 pages, three people would have to read the book for me to make the same amoung of money. Too many people have the idea that ALL writers are like Nora Roberts or Stephen King–that we get huge advances and sell millions of books and live in the life of luxury. I buy groceries and pay vet bills and put gas in my car. If our house wasn’t paid for and LG wasn’t on VA disability and me on SSA, I’d be working as a greeter at Wallyworld. The one advantage to be being in KU is the way Amazon weights their visibility algorithms so that the KU books are more visible to buyers than if the book is wide. This is a drawback but whatever. Not a big fan of putting all my royalties in one basket anymore. And this was probably TMI but you asked. LOL
