Tuesday Treats – Baked Eggs

Huh. I was going to share the recipe to a quick and easy “holiday” treat that has been a tradition on my side of the family since forever. I haven’t made baked eggs in ages so I went in search of a picture to use to illustrate. Holy cow! The variety and yumminess that I found knows no bounds! When I was growing up, baked eggs meant lining the cups of a muffin tin with bacon, cracking the eggs and dropping the contents into the cups, then baking until bacon and eggs were done. A dozen fed four of us. What I discovered? Dang! To get specific directions for what I’m now calling the basic version, click on the photo above.

That’s the Plain Jane. The possibilities look endless! Prosciutto ham. Canadian bacon. Cheese. Spinach. Chopped green onions. Hash browns. And bacon. With extras! The diversity is mind boggling. I’m going to have to totally rethink the whole baked eggs thing. I’m talking dinner. At any time! Just Google “Baked Eggs” and start checking recipes! Or just look at the pictures for inspiration. I’m thinking Canadian bacon, cheddar cheese, and chopped green onions. Or deli-sliced ham, fresh spinach, and feta cheese. Or…or…*muppet flail*

    I love that you have a name for you muse, Iffy. So appropriate, too. The muse is iffy at best. 😉

    Those look really good! I might have to give those a shot one day this weekend. We are staying home for T-day. First time we’ve done that. Hubby has been asking me to do that for years…this year he was like ‘REALLY?’ He was so excited he didn’t have to go anywhere. lol

      Iffy is short for her real name. 😉 And while she might be Iffy, it’s also because her favorite game is “What if?” 😀

      It’s nice when you don’t have to get up and rush around and go places. I’m rather fond of staying home.

  2. I’ve done this kinda sorta but in a mini-frittata way. I’m not a huge fan of unscrambled eggs. Quiche them, omelet them, frittata them, but for me, scramble those suckers! Having said that, though, any combination of added ingredients sounds good to me. If it works in an omelet, it’ll work in a baked egg cup. =o)

    And now I’m hungry.

      A bunch of the pics and recipes used scrambled (or “stirred” eggs). I like my fried eggs over easy but the baked eggs are always cooked until the yolk is solid–sort of like a hard-boiled egg. 🙂 And yes, the possibilities are endless! I’m hungry too! And may fix this for dinner tonight. With hot biscuits. 😀
