Tuesday Treats: Easy Parmesan Chicken

I like Italian food. Sadly, my two favorite family-owned Italian restaurants have gone out of business. Since I have the occasional craving for chicken Parmesan, when I found this recipe from Kraft, I knew I wanted to share.

Prep Time: 15 min.
Total Time: 45 min.
Servings: 6 servings

Save time with our Easy Chicken Parmesan! Bake chicken in spaghetti sauce to infuse your Easy Chicken Parmesan with flavor, no breading or frying required.

What You Need
1 jar (24 oz.) OLIVO by CLASSICO Traditional Pasta Sauce
6 Tbsp. KRAFT Grated Parmesan Cheese, divided
6 small boneless skinless chicken breasts (1-1/2 lb.)
3/4 lb. spaghetti, uncooked
1-1/2 cups KRAFT Shredded Mozzarella Cheese

Make It
Heat oven to 375°F.

Pour sauce into 13×9-inch baking dish sprayed with cooking spray. Stir in 1/4 cup (4 Tbsp.) Parmesan. Add chicken; turn to evenly coat both sides of each breast with pasta sauce mixture. Cover.

Bake 30 min. or until chicken is done (165ºF). Meanwhile, cook spaghetti as directed on package, omitting salt.

Top chicken with remaining cheeses; bake, uncovered, 5 min. or until mozzarella is melted. *Note: I use the grated (canned) Parmasan with the sauce but substitute shredded (fresh) cheese mixed with the Mozzarella.

Drain spaghetti. Serve topped with chicken and pasta sauce mixture.

  1. Ooo, looks good!

I get the Garden Vegetable variety of spaghetti sauce and then doctor it up with extra tomatoes, more veggies, mushrooms, olives, a little beef, more spices. Until I have a vat of the stuff. Then I portion it out and freeze it. We ate the last of my last batch for dinner yesterday. Time to make more. Too bad it’s too hot to stand over the stove for hours right now. Sandwiches, anyone? ;o)

No kidding on too hot in the kitchen! That’s why this dish appeals. Easy peasy and not long to have stove heating up the space. I like stuff in my spaghetti sauce but I’m something of a purest when it comes to chicken parmesan. 😉 And today is $10 Tuesday at Papa Murphy’s. Pizza it is!

Got something to say?
