This quick and easy chicken dish works year-round. If you’re looking for something with a little bite and a little different, give this one a try.

These cream cheese and jalapeño-stuffed chicken breasts are simple enough to make on the spot—but you can easily prepare them as part of a meal.
What You Need
8 small boneless skinless chicken breasts (2 lb.), pounded to 1/4-inch thickness
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 pkg. (8 oz.) KRAFT Mexican Style Finely Shredded Four Cheese, divided
2 fresh jalapeño peppers, seeded, finely chopped
1 egg
3 cups tortilla chips, finely crushed (about 1 cup)
1 cup green salsa
Let’s Make It
1 – Place chicken on work surface. Mix cream cheese, 1-1/2 cups shredded cheese and peppers until blended; spread onto chicken. Roll up tightly, starting at one short end of each breast. Refrigerate up to 8 hours.
2 – Heat oven to 375ºF. Beat egg in shallow dish. Place crushed chips in separate shallow dish. Dip chicken in egg, then roll in crushed chips. Place, seam sides down, in single layer in shallow pan sprayed with cooking spray.
3 – Bake 35 min. or until chicken is done (165ºF). Meanwhile, warm salsa.
4 – Top chicken with remaining shredded cheese. Serve with salsa.
Kitchen Tips
Tip 1 – Variation: Prepare using PHILADELPHIA Neufchatel Cheese and your favorite KRAFT Mexican Style 2% Milk Finely Shredded Cheese.
Tip 2 – Serving Suggestion: Serve with hot steamed broccoli.
Tip 3 = Special Extra: For more heat, do not remove the seeds from the jalapeño peppers before chopping them.
Tip 4 – Note: Chicken roll-ups can be secured with wooden toothpicks before baking if desired. Discard toothpicks before serving chicken.
MY Tip – I use “jarred” jalepenos because I always have them on hand, and I also serve red salsa and taco sauce for those who aren’t into green.

Go for it! I like the spicy too, but allergic to fresh/raw tomatoes so I have to substitute things like taco sauce to get my fix. 🙂
