Make a Pineapple Coconut Cake for your next big day. Our Pineapple Coconut Cake is frosted with an amazing mix of vanilla pudding, pineapple and coconut.

What You Need
1 can (20 oz.) crushed pineapple in juice, undrained
1 pkg. (2-layer size) white cake mix
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
2 pkg. (3.4 oz. each) JELL-O Vanilla Flavor Instant Pudding
1-2/3 cups cold milk
1/2 cup PLANTERS Pecans, chopped
1/2 cup BAKER’S ANGEL FLAKE Coconut, toasted

Let’s Make It
1 – Drain pineapple, reserving juice. Add enough water to juice to measure 1-1/3 cups. Prepare cake batter and bake in 13×9-inch pan sprayed with cooking spray as directed on package, substituting the juice mixture for the water and 1-1/2 cups COOL WHIP for the oil. Cool cake completely on wire rack.
2 – Beat cream cheese in large bowl with mixer until creamy. Add pudding mixes and milk; beat until blended. Stir in pineapple. Spread pudding mixture over cake.
3 – Top with remaining COOL WHIP, nuts and coconut just before serving.

Kitchen Tips
Tip 1 – Substitute: Use 1 pkg. (3.4 oz.) JELL-O SIMPLY GOOD Vanilla Bean Flavor Pudding.

Tip 2 – Substitute: Prepare using JELL-O Cheesecake Flavor Instant Pudding.

Click over to MY FOOD AND FAMILY to get all the nutritional details. Gemma West, the heroine in REMEMBER THE NIGHT, a Nightriders MC novella, says the guys in the Oklahoma Chapter request this cake year-round. She walks in the door of the clubhouse and they always look to see if she’s carrying one, or left it in her car. Lucky, her mate and the Oklahoma Chapter president, smirks and mentions that she makes it for him all the time. Their story goes wide this week, so everyone can grab a copy. Until it’s live at your preferred on-line book store, you can still snag it from Amazon and read it for free if you have a Kindle Unlimited subscription until August 20th. You can click on the cover or the title to be whisked away. 😊

So what’s your favorite summter-time dessert?

  1. Sounds yummy! Heh, like I need more cake in my life. (Cuz I already have oatmeal cake.)

Loved this story! I’m so glad everyone – even the anti-Amazon crowd – will get a chance to read it. =o)

Not sure why I’m insane enough to bake right now, but typically for go-to in the summer, it’s not anything I have to put in the oven. Ice cream… fruit salad… store bought desserts.

    Looks super wow ❤️
