Tuesday Treats & Titles: Cool Whip Snickerdoodles

When a horde of hungry Wolves and their families land in your pasture, the smart retired Army wife hits her pantry and whips up cookies that go with coffee, tea, or hot chocolate. Talk about easy peasy! Five ingredients. Fifteen minutes to whip up, Fifteen minutes to bake. And then it’s time to make the yum!

Prep Time: 15 Min.
Cook Time: 15 Min.
21 Servings, 2 cookies each

Learn to make this COOL WHIP Easy Snickerdoodle Recipe for the holidays. This easy snickerdoodle recipe is a simple way to perfect a classic dish.

What You Need
1/3 cup sugar
1-1/2 tsp. ground cinnamon
1 pkg. (2-layer size) yellow cake mix
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
1 egg

Let’s Make It
1 – Heat oven to 350ºF.
2 – Combine sugar and cinnamon in medium bowl.
3 – Beat remaining ingredients in large bowl with mixer until blended. (Dough will be thick and sticky.) Use 2 small spoons to drop dough, 2 tsp. at a time, into sugar mixture; toss until dough is evenly coated with sugar mixture.
4 – Place dough, 2 inches apart, on parchment-covered baking sheets.
5 – Bake 13 to 15 min. or until edges are lightly browned. Cool on baking sheet 1 min. Remove to wire racks; cool completely.

Kitchen Tips
Tip 1 – Chocolate-Cinnamon Crinkle Cookies: Prepare using a devil’s food cake mix.

Tip 2 – Mindful Eating: Treat yourself on occasion to bite-size tastes of indulgent foods.

My Tip – I used a Betty Crocker white cake mix (NOT angel food!). The dough is VERY gooey but once you drop a ball of it in the cinnamon sugar, you can roll it around to coat and pick up and put on the cookie sheet with fingers. I’m a hands-on baker like that. LOL Lawyer Guy gives them 👍🏼👍🏼. Me, too.

  1. Hmmm… I actually have these ingredients in the house… But the yellow cake is slated for coffee cake and the whipped cream is for the pumpkin cheesecake I have on the docket for Christmas. I may get crazy and make these anyway. We’ll see. The last time I made snickerdoodles the usual way, it didn’t go well. You know I’m all about the cake cookies, so I’m intrigued by the way this recipe changes it up a bit. Decisions decisions.

    I loved this story! So much fun.

    My mom had a spritz-cookie machine and those were always fun to make. (The last time I did those, it didn’t go well either. And now I’m sitting here wondering what happened to the machine thingy. I can’t believe I would’ve thrown it out, but I don’t have it anymore… Lost in one of my many moves most likely.) Owl used to make awesome coconut rum cookies during our Christmas baking extravaganza. I enjoy chocolate cake cookies with chocolate mint patties pressed in the middle. So many cookies to choose from, how can I pick a favorite?

      You must have had your first cup of coffee. 😉 And all I can say was, these cookies were easy, took a little over 30 minutes because I only put one cookie sheet at a time in the oven. The first pan was a little brown but still soft in the middle. The second batch got overcompensated and they were soft all over. There’s a happy medium and I’ll find it the next time I make these cookies. I have a “scratch” recipe for the giant size soft snickerdoodles and it takes forever. I can whip these up in no time at all and it works out cheaper than buying the Braum’s bakery cookies. It’s worth another trip to the store. Also, LG said he say a French Vanilla cake mix and I might get wild and crazy and use it for the next batch. LOLOL
