Tuesday Treats & Titles: Chicken Breasts Parmesan

I’m a big fan of Italian food. And chicken parmesan ranks right up there as a favorite. I’ve been known to make “Poor Man’s Chicken Parm” using breaded chicken patties and spaghetti sauce. Yeah, yeah, My bad. When I want something fast and don’t mind the clean-up, I pull out this recipe.

Prep Time: 10 Min.
Cook Time: 16 Min.

Make a crispy coating of Parm and bread crumbs for Chicken Breasts Parmesan. Add zesty marinara to Chicken Breasts Parmesan for our version of the classic.

What You Need
1-3/4 cups CLASSICO Marinara with Plum Tomatoes & Olive Oil Pasta Sauce
1/2 lb. linguine, uncooked
1 egg
1/2 cup KRAFT Shredded Parmesan Cheese
1/4 cup dry bread crumbs
1 tsp. dried Italian seasoning
4 small boneless skinless chicken breasts (1 lb.)
1/4 cup olive oil
1/4 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese

Let’s Make It
1 – Heat pasta sauce, and cook pasta as directed on package omitting salt.
2 – Meanwhile, beat egg lightly in shallow dish. Mix next 3 ingredients in separate shallow dish. Dip chicken in egg, then in cheese mixture, turning to evenly coat both sides of each breast.
3 – Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 6 min. on each side or until done (165ºF). Top with mozzarella; cover. Cook on low heat 3 min. or until mozzarella is melted.
4 – Drain pasta; place on platter. Top with sauce and chicken.

Kitchen Tips
Tip 1 – Family Fun: Take a long walk with your family after enjoying this meal together.

My tip: I serve either one LARGE breast or two small ones. Don’t judge. This makes two servings for us but since there’s only two of us, there ya go.

  1. Yep, I do a chicken parm thing with frozen, breaded chicken patties. Quick and yummy. This recipe does sound yummy, but I fear I am too lazy to make it. Funny you should mention Italian. Last night was spaghetti night. Yay! I love Italian and we do it several times a month. Okay, it’s spaghetti. We do spaghetti several times a month. And pizza. If you count pizza as Italian. ;o)

    Naturally, I love this book so much! It’s made of awesome.

      Sure, I’ll count pizza. 😉 We do Stouffer’s Lasagna upon occasion. I make my own spaghetti. I used to make my own lasagna but I had to plan ahead to make sure I had all the ingredients on hand. Stouffers is almost as good and sits in the freezer until we get a hankering. This recipe comes out when I want to get fancy and/or impress someone. LOLOL Stay warm and in. Sounds like you are in the ice zone instead of the snow zone. Bad news all around. 😦

      • Nothing but rain has hit here yet. We’re in the ice zone first and then the snow zone. Should be fun. Not. They’re talking about this rivaling the storm of 2011. We weren’t here then, but we’ve heard about it from numerous people. Fingers crossed they’re wrong. This area was without power for 7-10 days that time. Blerg.

          Yikes! We’ve had a few storms like that. Luckily, we have Natural Gas! (The all-electric idiots drive me nuts. NG is just as clean (if not actually cleaner!) than electricity. And with the gas range and four wall heaters spaced around the house, we stay toasty warm, with coffee and hot food. No clue what people with no gas do except try to find a hotel. Yeah, good luck with that. Anyway, they’re predicting 4-7 inches of snow through Thursday but brutal cold tonight and tomorrow night. Our freezing rain seems to be over for now so we dodged that bullet! Stay warm and dry and I hope the bulk of it misses y’all!!!
