Today dawns as the first day of winter, but also the beginning of a climb toward longer days. This is a magical time of year and I can’t help but feel hopeful despite all the dark in the world. Here’s a simple treat in case you don’t have enough this time of year. 😉
I gorged on these at the OKRWA Christmas party. Soooo good! I love pecans. This was a gimme recipe as far as I was concerned! Warning, you will need a candy thermometer to make it.
1 1/2 cup sugar
1 teaspoon corn syrup
1/2 teaspoon salt
1/2 cup water
1 teaspoon cinnamon
1 teaspoon vanilla
Stir ingredients together and cook in a heavy pan until soft ball (235-240° F) stage. Remove from heat and stir in 3 cups of pecan halves. Turn onto foil. Let cool. Serve and enjoy.
The weather here is unseasonably warm, but it’s an El Nino year. This is to be expected. Of course, that means we’ll get hammered come January, February, and March. That, too, is expected. How’s the weather in your neck of the woods and do you have any special treats you like to fix this time of year?
















Looks yummy. I did a couple batches of those pretzel turtles you talked about last year. They turned out pretty good. That’s all I’m doing this year other than a cheesecake… or a walnut cake. I haven’t decided. I guess I’d better get off my buns and figure that out, eh?
The weather here is lovely. We went for a long walk yesterday to enjoy it.
I did the turtle pretzels last year and the were pretty good. I didn’t do much beyond cookies this year. I may do the pecans for New Years. 🙂 And I’m doing a pecan pie bread pudding for Christmas Eve. The review and recipe for that will be up next week. 😉
Ooo, that sounds good. Can’t wait to see the recipe. And I said ‘walnut cake’ but it’s actually walnut graham cake. I must be committed to making it since I made a trip out to get OJ today. Maybe I’ll post that recipe next week.
