Labor Day weekend is coming up fast! Here’s a quick, easy, and totally yummy addition to any outdoor BBQ, cook-out, picnic, or “grill out” as the Nightriders call their parties whenever the old ladies and food are involved. And those serving sizes? The Wolves just laugh. 1/2 a cup? That’s not a serving. That’s a bite! 😉

Servings: 14 servings, 1/2 cup each

What You Need
3 lb. small red potatoes (about 12), cut into 1-inch chunks
1/2 cup water
1/2 cup MIRACLE WHIP Dressing
1/4 cup KRAFT Classic Ranch Dressing
6 slices OSCAR MAYER Bacon, cooked, crumbled
1 cup KRAFT Shredded Cheddar Cheese
4 green onions, thinly sliced
Make It
Place potatoes in 2-qt. microwaveable dish. Add water; cover with lid. Microwave on HIGH 12 to 15 min. or just until potatoes are tender; drain. Place in large bowl.
Refrigerate 1 hour or until completely cooled.
Mix dressings until blended. Add to potatoes along with remaining ingredients; mix lightly.

Samantha “Sam” Prescott, mated to Easy Cross, doesn’t even ask what she can bring any more. She just makes a huge heaping mess of Steakhouse Potato Salad. When I asked her how much she makes for the Club, she mumbled something about having to boil 50 pounds of potatoes, and wandered off chugging a beer. Actually, that was a knee-jerk reaction. I haven’t actually tried potato salad in probably 35 years, so maybe I’ll give it a fresh whirl. I do that every once in a while, because hey, tastes change. I didn’t like asparagus and now I do, so there’s hope. And yeah… BACON!
And ranch dressing. 😆 And easy prep. So…yeah. 😉
