Tuesday Treats: Chicken Tetrazzini Florentine

I ❤ pasta. Just sayin'. And I'm always looking for "batch" meals where I get all my food groups covered–including veggies. This ooey-gooey casserole covers all the bases!

Prep Time: 25 min.
Total Time: 1 hr.
Servings: 6 servings, 1-1/3 cups each

Chicken Tetrazzini Florentine: A complicated name for an easy way to get a hot, cheesy chicken and pasta bake on the table!

What You Need
1/2 lb. spaghetti, uncooked, broken into thirds
1 pkg. (6 oz.) baby spinach leaves
3 Tbsp. butter
1 onion, chopped
1/2 lb. sliced fresh mushrooms
3 Tbsp. flour
1-1/2 cups fat-free reduced-sodium chicken broth
1 tub (8 oz.) PHILADELPHIA Cream Cheese Spread
2 Tbsp. milk
1 tsp. dried Italian seasoning
1/2 tsp. garlic powder
2 cups shredded cooked chicken (grilled sliced)
6 Tbsp. KRAFT Grated Parmesan Cheese, divided
1-1/2 cups KRAFT Shredded Mozzarella Cheese with a TOUCH OF PHILADELPHIA

Make It
Preheat oven to 350°F.

Cook spaghetti in large saucepan as directed on package, omitting salt and adding spinach to the boiling water for the last minute. **Blanch instead

Meanwhile, melt butter in large skillet on medium heat. Add onions; cook and stir 5 min. Stir in mushrooms; cook and stir 4 min. or until mushroom liquid is cooked off. Add flour; cook and stir 1 min. Stir in broth; cook 4 min. or until thickened, stirring constantly.

Mix cream cheese spread, milk and seasonings until blended. Drain spaghetti mixture; return to pan. Add cream cheese mixture, mushroom mixture, chicken and 3 Tbsp. Parmesan; mix well. Spoon into 13×9-inch baking dish sprayed with cooking spray; cover.

Bake 25 min. Top with mozzarella and remaining Parmesan; bake, uncovered, 8 to 10 min. or until spaghetti mixture is hot and bubbly and mozzarella is melted.

Y’all know the drill–CLICK HERE to get all the nutrional details about recipe from Kraft. Tait “Shooter” McCord was my Wolf of the Week over on Facebook so it’s his lady’s turn to step up and Lauren Reilly whispered that she snuck this recipe onto their dinner table and Tait ate his spinach without complaint. She’s pretty smart for a city mouse. 😉 For those of you who haven’t read their story, it’s told in MONTANA MOON, which is a crossover of my Moonstruck Wolves and Elle James’s Brotherhood Protectors World. Lauren is on the run from some bad men due to her job at the Pentagon. Tait is just doing a favor for a friend by looking out for her. Yeah…about that… *bwahaha* Just click on the cover for the buy link or read it for free with a Kindle Unlimited subscription. It’s also available in print from Amazon. Who else likes to hide their veggies?
