Tuesday Treats and Titles: BBQ Chicken with Grilled Apples Salad

When it’s too hot to cook, it’s time to go to Plan B–grilling! This tasty salad combines a lot of flavor with easy prep, cook, and clean-up. What more could you want on a summer evening after a hard day at work or play?

What You Need
4 small boneless skinless chicken breasts (1 lb.)
2 Granny Smith apples, each cut into 4 wedges
1 large red onion, cut into 4 wedges
1/4 cup KRAFT Zesty Italian Dressing
1/2 cup KRAFT Original Barbecue Sauce
6 cups loosely packed torn mixed salad greens
1/2 cup KRAFT Classic Ranch Dressing

Let’s Make It
1 – Heat grill to medium-high heat.
2 – Brush chicken, apples and onions with Italian dressing. Grill 10 min. or until chicken is done (165°F) and apples and onions are tender, turning occasionally and brushing chicken with barbecue sauce the last few minutes.
3 – Slice chicken. Toss with salad greens, apples and onions.
4 – Serve topped with ranch dressing.

Kitchen Tips
Tip 1 – Substitute: Substitute KRAFT Balsamic Vinaigrette Dressing for the Italian dressing.

Tip 2 – Nutrition Bonus: Grilled apples, onions and tangy barbecue chicken make the perfect toppings for this flavorful low-calorie main-dish salad.

My Tips: Tip one works for me while LG prefers the original Ranch dressing. Either is tasty. Also, I’ve substituted fresh spinach (hence the vinegarette dressing) and it was yummy too! And, I serve the salad dry so folks can put the amount of dressing they want on their own serving.

  1. Love me some grilled chicken on my salad, but I’m not sure about apples. My salads are usually nothing fancy – lettuce, carrots, tomatoes and some kind of meat n cheese.

    Love love love this book! I really wish more people would find your books and love them as much as I do. I cook in the summer. If i get hot, I crank up the AC. If I feel too hot to cook, we do sandwiches or salad (if I have it in the house). And no, I don’t read while I eat or eat while I read. The potential of getting food on my books, doncha know. :shudder:

      Ah, that’s the joy of audio books. 😉 And I’m not huge on apples, but this is kind of an interesting taste combination.

      Believe it or not, I’m rereading this book. I normally don’t read my stuff after I publish it because there’s always something I want to fix. This one? I’m like…damn! This is pretty good stuff. LOLOL And yeah, I wish more people would find all OUR books. You have some awesome one out there that I totally love too. Wish I had a magic wand…
