I found this recipe somewhere and tucked it back to be posted when the leaves turned and the temps cooled and the scent of pumpkin pie spice fill the kitchen. I’m not a huge fan of crock-pot desserts but when I read the recipe thought this sounded pretty darn tasty and easy. Granted, I haven’t tried it–yet. Anyway, I dug it out for today and I might just give it a try between now and Thanksgiving just to see. I did find the recipe posted somewhere else and I posted the link below so you can check it out if interested.
Ingredients:
1 can (15 oz) canned pumpkin puree
8 (oz) evaporated milk
1/2 cup cream soda
1 teaspoon vanilla extract
1 cup brown sugar
1 cup Bisquick, divided
2 eggs, beaten
4 tablespoons butter, cut into 8 pieces
1 Tablespoon pumpkin pie spice
Whipped cream for garnish
Directions:
Combine pumpkin, milk, cream soda, vanilla, brown sugar, 1/3 of the Bisquick, eggs, and pumpkin pie spice in large bowl. Pour into crockpot and top with 1/3 cup Bisquick mix. Place slices of butter on top, then cover with remaining Bisquick mixture. Cook on low for 6-7 hours, serve, and enjoy!
Believe it or not, this most likely is a favorite recipe made by Isabelle Fontaine, Rudek Tornjak’s heroine in ROGUE MOON. It’s still warm down in the bayous on Thanksgiving and being able to toss everything into a crock pot and let it cook all day? Certainly sounds like the Cajun way to me. And you can bet that Rudy gets all snarly and possessive when Izzy tells him he has to share with the rest of the Wolves. 😉
