Tuesday Treats: Pesto Chicken and Pasta

So, we’re coming up on holiday season and for a lot of us that means not much time for fixing dinner and leftover turkey. While this recipe calls for chicken, you can make it with sliced turkey, too. And it’s not exactly “American Traditional Holiday” food. It’s quick, easy, yummy, and no leftovers!

Total Time: 25 Min (Prep and Cook)
Servings: 4

Enjoy epic garlic-pesto flavor with our Pesto Chicken and Pasta recipe. Ready in 30 minutes, our Pesto Chicken and Pasta is a flavorful weeknight favorite.

What You Need
1 Tbsp. oil
1 lb. boneless skinless chicken breasts, sliced
1 clove garlic, minced
1 large red pepper, cut into thin strips
1/4 cup CLASSICO Traditional Basil Pesto Sauce and Spread
1 lemon, cut in half, divided
1 cup KRAFT Finely Shredded Italian* Five Cheese Blend
2 cups hot cooked angel hair pasta

Let’s Make It
1 – Heat oil in large nonstick skillet on medium heat. Add chicken and garlic; cook and stir 4 to 5 min. or until chicken is evenly browned. Add peppers; cook 3 to 4 min. or until chicken is done, stirring frequently.
2 – Stir in pasta sauce and juice from 1 lemon half; top with cheese. Cover; cook on low heat 2 to 3 min. or until cheese is melted. Spoon over pasta.
3 – Serve with remaining lemon half, cut into wedges.

Kitchen Tips
Tip 1 – Special Extra: Serve over hot cooked orzo.

Tip 2 – Serving Suggestion: Serve with a mixed green salad and your favorite fruit.

Tip 3 – Substitute: Sliced turkey for the chicken and cut cooking time because it just needs to be heated through.

  1. I do all sorts of things with leftover turkey. Since it’s just the two of us, we have loads of leftovers every year that I turn into turkey pot pie, grilled turkey & cheese sandwiches, turkey soup, turkey pasta… Not a huge fan of pesto, so I probably won’t be adding this one, but hey, that’s life.

    Gah, this reminds me that I have to buy the turkey this week. And the fixin’s. I can’t believe Thanksgiving is next week already. Blerg.

    And SQUEE for Antoine and DJ!! I swear, everyone needs to read these books. So much awesome.
